What is the basic principal of eating as a diabetic?

I have recently been diagnosed as a “borderline diabetic”. I am almost 41 years old. I have illiminated sugar and white flour to the best of my ability from my diet and eat three meals a day with a snack in the evening.
So far, I have lost 15 pounds in 30 days; my current weight is 235.0 lbs and I am 5’10”. My question is, what is the basic principal of eating as a diabetic? Is there an amount of protein/carbs/fat that one should eat to maintain a constant glucose level in the blood? Or a specific timing? Thank you so much for your help.

Why is my blood glucose increasing overnight?

But, then first thing in the morning before breakfast, it seems to spike (145-160). Anyone else experincing this? What can I do to manage?

Is it ok that I only eat chicken and not any other meat?

My doctors say that being diabetic can also affect your protein levels (?), and since I was a vegetarian, I already was working to keep my levels up. Since chicken has a lot of protein, I eat that once in a while. I **** to eat it, but it works better than soy when I am feeling sick. I try to stay healthy with the diabetes and vegetarian diet, but is ok for me to follow a vegetarian diet, but sometimes have to eat chicken? I refuse to eat red meat. I don’t go on rampages telling people they are evil for eating meat, I just prefer not to eat it. My friends call me a chickitarian, but can I still be an ovo-lacto vegetarian?
